Meet the Curator.

Amber Pollock is a farmer, chef, poet, and former diesel technician whose career has unfolded almost entirely within male-dominated fields. From turning wrenches to running tractors to leading a diversified farm business, she has built her life around defying expectations and expanding her own definition of what women can do—and what they deserve to take pride in. These experiences now shape her mission: to help young women see possibility far beyond the limits they’re handed.

As co-owner of Sunfox Farm in Concord, NH, Amber manages everything from field production to product development, crafting small-batch sunflower oils, herbal teas, and local foods. She pairs hands-on agricultural skill with culinary creativity, drawing on her background as a chef to create honest, nourishing products rooted in the land.

Amber is also the founder and curator of Letters to a Young Woman, a collaborative book project collecting guidance and lived wisdom from diverse women across the country. Through her work—on the farm, in the kitchen, and on the page—Amber champions resilience, curiosity, and the idea that women belong in every room, every field, and every story.
